- Peel and cut the pumpkin into slices about 2 cm thick.
- Grease a baking dish with a little butter or vegetable spray and place the pumpkin slices.
- Cook for a few minutes, until they are tender.
- In a pan with a little oil, sauté the sliced leek and raw spinach.
- When both vegetables are tender, add the cream cheese and cook for a few minutes to thicken.
- To assemble the lasagna, intersperse a layer of pumpkin slices with a layer of leeks, spinach and cream. It is very simple: on the plate place for example, a slice of pumpkin, then a tablespoon of filling, spread well, another slice of pumpkin, another tablespoon of filling and so on.
- To make the sauce (which is poured on top of the last layer of the lasagna), sauté the finely chopped onion with the filleted mushrooms and cream.
- You can instead of placing on a plate, make the pumpkin lasagna on a baking sheet and once you meet the layers, pour the sauce and sprinkle with grated cheese.
- Place in the oven to gratin the cheese and … at the table.
2. Pumpkin lasagna with batter
In this case, you will use lasagna batter. You can prepare it yourself if you dare or buy it made.
Ingredients for 4 people:
- 1 package lasagna pasta
- 1 kg of pumpkin
- 100 grams of Parmesan cheese
- 2 leeks
- 50 grams of butter
- Half a liter of milk
- 1 tablespoon of cornstarch
- 3 tablespoons pine nuts (can also be walnuts)
- Salt, white pepper and nutmeg to taste

The steps to follow to prepare this delicious pumpkin lasagna recipe are:
- Prepare according to the instructions on the package, the lasagna pasta.
- Peel the pumpkin and cut into pieces roughly the same thickness.
- In a saucepan with water and a little salt, cook the pumpkin slices for a few minutes so that they are tender.
- Cut the leeks into thin slices.
- Sauté the leeks and squash in a pan with butter. Cover with the lid and bring to a boil to cook the leeks.
- Meanwhile, prepare the bechamel for your pumpkin lasagna. To do this, melt the butter in a saucepan and add the cornstarch.
- Add the warm milk (or at room temperature) little by little, stirring constantly so that no lumps form.
- When it begins to thicken, remove from heat.
- Crush the pumpkin and season to taste and mix with the Parmesan cheese.
- Form the lasagna on a baking sheet, placing a little oil first, then a layer of pasta, a layer of filling, a layer of the béchamel, another layer of pasta, another layer of filling, another layer of the béchamel and so on. successively until all the ingredients are finished.
- To finish, cover the lasagna with mozzarella cheese (so that it melts). Another delicious option before cheese is topping with tomato sauce or slices of raw tomato.
- Bake at 180ºC for approximately 20 minutes, or until the cheese is completely gratinated.
