Artichoke And Prawn Lasagna

Vegetables are a mandatory component in a healthy and balanced diet. Among all of them, the artichoke arouses very opposite opinions in consumers. There are those who absolutely love them and there are those who cannot even see them. Although it is true that they are a bit bitter, if you taste those from Navarra and remove the upper layers, they become a delicacy (for almost everyone).
Recipe: artichoke and prawn lasagna
Ingredients for 4 people):
- 8 plates of lasagna
- 350 g of prawns
- 3 artichokes
- 1 tablespoon of flour
- 500 ml of milk
- Oil
- Salt
Process:
Clean the prawns and artichokes
- Wash the prawns and peel them, keeping the heads to prepare a broth with them.
- Clean the artichokes, cut them into thin slices and immerse them in a container with water and a little vinegar, until it is time to use them.
Cooking the lasagna plates
- In a large pot, heat enough water over high heat. When it boils, add the lasagna plates laying them horizontally on the surface of the water. If you don’t have a large enough pot, they can be cooked twice and instead of draining the water, remove the plates with a slotted spoon and recycle the water for the second batch.
- Cook for 10 minutes or according to package directions. When they are ready, immerse in a large container with cold water until it is time to use them.
Prepare the bechamel:
- With the milk and the flour we are going to prepare a very clear béchamel.
- To do this, cover the base of a pot with olive oil and heat.
- Over low heat, add two tablespoons of flour (if you are patient, sifted. If not, it can be done without sifting), while stirring with a wooden spoon. When the flour has the consistency of a puree, but without becoming a paste, add the milk little by little and continue stirring for approximately 20 minutes.
- It is important not to stop stirring at any time while making the bechamel. Once it is done, add the shrimp head broth and stir until a homogeneous mixture is left.
Cook the artichokes and prawns
- Remove the artichokes from the water and drain them very well, turning them upside down.
- Put two tablespoons of oil in a frying pan and sauté the prawns over high heat for a minute, until they change color. Remove to a plate and reserve.
- Make the artichokes on the grill over high heat, in the same pan as the prawns. It’s best to do it in batches so that the pan stays very hot and the artichokes don’t clump together. Keep in mind that for the artichokes to do well, you have to add oil frequently.
How to assemble the artichoke and prawn lasagna
- To do this, grease a square or rectangular oven dish with a little oil.
- Preheat the oven to 150ºC.
- Remove the plates from the water and dry them carefully with a clean cloth.
- Place two plates of lasagna covering the bottom of the oven dish, place half of the prawns and spread another two plates of lasagna on top, ensuring that the joints of both layers do not coincide.
- Spread over the second layer of plates, half of the artichokes and repeat the layers of plates, prawns and artichokes until finished with the ingredients.
- Once finished, cover with the prawn béchamel and bake at 150ºC for about 20 minutes.
- This dish can be frozen once finished and even made the day before and left in the oven. But if you do it like this, you have to try to make the bechamel clearer, as it thickens over time.
