Stuffed Aubergines With Turkey
This exquisite recipe for stuffed turkey aubergines will be ready in a few minutes and is very easy to prepare. In addition, it has two light ingredients in a single dish, aubergines and turkey, among others.

Turkey Stuffed Eggplant Recipe
Ingredients
- 2 aubergines
- 1 green pepper
- 250 g of ground turkey meat
- 1 red bell pepper
- 1 onion
- 150 g of fried tomato
For the bechamel
- 3 tablespoons of butter
- 1 glass of milk
- 3 tablespoons of flour
- a pinch of salt
- 1 pinch of black pepper
- 1 pinch of nutmeg

- Baking tray
- Frying pan
- A spoon
Preparation
Bake the aubergines:
- First, we wash the aubergines, remove their stem and cut them in half lengthwise. We then place the 4 halves on a baking tray or glass dish.
- Add a splash of olive oil, a pinch of salt and black pepper on top.
- Next, we bake the aubergines at 200ºC for about 10 minutes.
- We take them out and reserve them while we prepare the aubergine filling.
Prepare the filling:
- Wash and dice the onion and peppers. In a frying pan, we add a little olive oil and, when it is hot, we add the vegetables with a pinch of salt. Sauté until soft.
- Next, we empty the aubergines, reserve the skin in the shape of a boat, cut the baked pulp into cubes, and add the peppers and onion to the sauce.
- After about 5 minutes of sautéing the vegetables, we then add the minced turkey meat and the fried tomato. You can put, if you see necessary, a little water and a little more salt.
- Once the filling is done, with the help of a spoon, we fill the aubergines. We distribute the amount of filling well in the four halves of the aubergine skins to form a kind of boats.
Prepare the bechamel:
- To start, in a pan we put 3 tablespoons of butter and let it melt.
- We remove the pan from the heat and add 3 tablespoons of flour. Then we stir well so that they mix completely.
- Once everything is compact, we add the milk little by little without stopping to stir, until everything is mixed evenly.
- Then we put a pinch of salt, another of black pepper and another of nutmeg. Then we stir the mixture over low heat until it thickens. We bake.
- Afterwards, we pour the bechamel on top of the aubergines with the filling. If desired, grated cheese can be added at the end.
- Finally, we bake at 250 ºC for 15 minutes.
And we already have our aubergines stuffed with turkey and peppers with bechamel ready. Delicious!
Turkey stuffed aubergines with the Thermomix

Ingredients
- 2 aubergines
- 2 turkey fillets
- Two cloves of garlic
- 200 g of crushed natural tomato
- Half an onion
- Olive oil
- 1 pinch of salt
- 1 pinch of sugar
- Grated cheese for gratin
Preparation
- To begin, we wash the aubergines, remove the prickly stem and divide them into two large halves, with the help of a spoon, remove the pulp and reserve.
- Then we season the aubergines and place them skin side up in the Varoma container.
- We put the onions and garlic in the jar of the Thermomix and crush them at speed 6. Then we add the olive oil, put the Varoma container and fry for a minute.
- We take out the Varoma and add tomato, aubergine pulp, salt and sugar. For 5 seconds we grind with speed 4.
- At Varoma temperature and with speed 2, we place the Varoma container again and fry for 15 minutes.
- Next, we take out the container and add the turkey fillets cut into squares. At speed 3 of the Varoma temperature, fry for 2 minutes.
- In a baking tray, we spread it with oil and place the aubergines. We fill them and then we put cheese to gratin.
- Finally, we gratin in the oven until the surface of the aubergines and the cheese turn golden.
